I've recently had a journey in a 25 reg Volvo EV which was pleasantly quiet. All the audible warnings had been turned off in the settings. This was done once and not on a per journey basis.
John Ratsey: Sure. Other new cars have a permanent switch-off of the speeding warning sound: Renault, Dacia, Mazda... I don't think there is a law that says it can't be permanently switched off.

@ stani: Regarding Renault and Dacia, I'm absolutely certain that you simply can
not permanently disable the speeding warning sound. However, it is possible to combine several warning systems under a single button and deactivate them for individual trips.
BMW and Mini also have such a system: press and hold the SET button for two seconds.
In principle, tuners and technicians can often disable the speeding warning through software (like stani's guy), but not always. This isn't possible with every make and model.
Please note that if the software is permanently disabled, this means
your car no longer meets European safety requirements. In the event of an accident, you will likely have problems with the police and your insurance company.
But... of course everyone has to decide for themselves what risks they want to take to no longer hear a few beeps...
