Update after I did some digging. posting in case it saves anyone else the trouble. First, my own premise was wrong: the SR has no reversing camera, the camera starts at EX. Second, the 5"→9" head unit swap is fraught with difficulties: The SE's 39100-TZA-E013-M1 is a Pioneer with 5 rear connectors, the 9" 39540-TZA-* is a Panasonic with 9 with different sizes, positions and colour-keying, so the SE loom physically cannot plug in, and no SR/EX instrument-panel sub-harness is available as a part. I'm not capable of DIYing that. Third, Honda head units are VIN-locked: the unlock code is keyed to the serial number on the back of the unit and must come via a Honda dealer (HDS won't do it). After a successful code entry from the dealer, the unit re-registers itself to your VIN automatically. Fourth, on sensors: Honda never released an accessory parking-sensor kit for the Mk4 (the 2016-19 Jazz had one). The one genuinely good bit of news is the camera: Honda's own 2021 accessory brochure lists kit 08A77-TZA-PAIDB as available on the 5"-screen car, so an OEM camera on the standard SE screen should fit. Two footnotes for anyone thinking of going aftermarket instead: there is no Connects2 fascia, no SWC interface and no CANbus interface for the Jazz 2020+ (all three stop at 2019/2020).
I think I'm going to go third party all the way, the OEM route seems way to finicky for sensors and head unit, but at least cameras are ok. I'm not intending to sell which is why I'm unbothered by changes to the car value
