That sounds about right for that engine. They really can't be called long legged tourers.  Local/town work unbeatable but not designed for the Grand Tour.

I put the gear ratios and tyre sizes through a calculator = around 3,400 rpm @ 70 mph.

Seems normal then for a manual.

I'd say that was normal.
in my case (15" standard alloys, standard size tyres)
using top gear,
40mph =2000rpm
60mph =3000rpm
70mph =3500rpm
mrs mkjazz has a 1.0 litre seat mii.... on a recent trip to scotland i noted that it revved lower than my jazz. 3000rpm @70mph. gearing is probably longer. fuel economy wasn't as good as i thought it should be though. only got 60mpg... but then i was driving and it wasn't my car..... i wasn't hanging about. ;)
 jazz wouldn't be far off that.... with a lot more grunt. i don't want to pay the tax bill or fuel bill for a big car, so my next car will probably be a jazz again..... i love fizzy little petrol engines. i also love little cars, especially when it comes to embarrassing big cars and only using half the fuel to do it. ;D

ps. watch out for the cold idle.... usually just under 1500rpm in neutral until it warms up a bit. that's normal too.

Honda engines love to rev, you could drive around the world in one go in a Jazz and you would give up long before the engine did.   My first Civic (a 1.5 VTEC) was pulling about 2400 RPM at 70 on a motorway (28.5 mph / 1000 revs in top and did 180K without a spanner on the engine) , my present Civic  (a 1.8 I-VTEC) is around 25 mph/1000 revs) - I had many long motorway journeys in the 1.4 Jazz (Cornwall, Scotland and all points in between) and easily sat at 80mph for hours.  The engine in your Honda is one of the finest pieces of engineering on the planet, just keep decent oil in it and it will never let you down (by the way - one of the tests Honda do on their engines when they are developing them is to run it at full revs for 24 hours straight - how many other engine makers would dare to do that ?)
Some people will only consider you an expert if they agree with your point of view or advice,  when you give them advice they don't like they consider you an idiot

Sorry, I was a bit tongue in cheek. I really like the engines that Honda produce, the i-dsi and i-vtec are lovely little engines. However, even as a Jazz lover I have to confess that I would use the Corniche or Volante for the Grand Tour around Europe. For a trip of 250 miles I would use the Jazz. Also having neither of the above GT cars, I would personally use the Jazz for driving to Europe, as indeed I have on occasion. The magic seats allow a lot of boxes from a cave to be carried safe and snug with cases in the boot.
OT, I saw a very nice Accord coupe 3l v6 today, nice engine.
