I find the seats on my Jazz Mk3 uncomfortable on a longer run. Can I replace them with something more comfortable and supportive?

You'll need to check the potential safety aspects,  does it have bolster side airbags for example.
Not saying you can't,  just check things carefully.

I wrote there following reply:

In the US Fitfreak-forum there are several threads about seat replacement projects. My summary would be that in most cases the electronics is the challenge, which could not been solved. Typically the seat belt sensors and the sensor, which tells if there is someone sitting in the co-driver's seat. I remember just one successful seat replacement, where the guy changed every single electronic component from the original seat to the new ones.
