My previous Honda cars with cruise control all worked the same, select speed press the set button, cancel by pressing brake or clutch or the cancel button.
Current Mk3 does not cancel when clutch depressed so a gear change can be done, say down and car will then accelerate away before again changing back up.

Anyone else notice this?

There's another thread on Cruise Control that contains this:
I have owned many cars with cruise control but the Mk3 Jazz is the first one where the clutch pedal does not instantly cancel the CC. I wondered what was going on when I changed gear and the CC remained active.

Having just checked the book I have discovered that the clutch pedal must be depressed for more than five seconds to cancel the CC. (Page 416)

It's not a problem.  It's a great feature.
