(images attached). I don't know much about cars, but this doesn't seem healthy to me. This is on a Honda Jazz 2007 1/5 Vtec. The front side of the engine (the intake manifold)
Should I replace something?
Should I clean it?
What is causing it and how do I stop it from happening?
Is it normal?

It's normal, the PCV adds oily vapour that fouls up the intake manifold, I've had that happening on every vehicle I've ever had.
Why did you need to take the intake off?

I'm not sure on the Mk1 but if you google it you'll find out pretty quickly.

But the ops intake looks normal for that year and im assuming fair amount of mileage, it doesn't even look particularly bad, the only thing that may need doing but it's not essential is to clean the oily residue off.

You can buy a brand of intake cleaner. Just make sure it's past the maff if you have one.
Keep the car revved to 3k and get a mate to spray the whole can into the inlet. It really cleans out the throttle body, intake manifold and other crud in the engine.
It's like a cheap version of seafoam that has a better ingrediats
I will warn you that it will smoke like hell and having a high amount of good injector cleaner. You know the one the pte or whatever its called also helps a lot.
Afterwards it feels like a new car on high mileage cars 2 cans is recommended with some time inbetween.
If your servicing your car do this before changing oil and plugs.
