I've read the manual a few times and I just can't get my head round this, it says:

"Hill start assist keeps the brake engaged briefly to help to prevent the vehicle from rolling on inclines as you move your foot from the brake pedal to the accelerator. Put the transmission into [D], ['B'] when facing uphill, or [R] when facing downhill, then release the brake pedal"

I think I understand the logic but if you pull up at some traffic lights on a downhill incline and put the transmission into [R] isn't it going to reverse into the car behind when you accelerate if you forget to change it to [D] ?

Plus, doesn't brake hold render this pointless ?

As for the rest of the manual settings, I thought reinstalling Windows was bad enough. This seems like almost a days work to run through all the options. Certainly far more than my 2013 Civic.

It is not very clear, but I think it means when starting off UP A HILL. So it means when reversing up a hill. Clear as mud.

You wouldn't need hill start if your facing downwards.

You wouldn't need hill start if your facing downwards.
You would if you wanted to start off in reverse, eg when parallel-parking on a slope where the first move into the space is backwards (I have to do that every time I park my car at home). Hill start assist can be an absolute pain in that situation, because it holds the brake on when you want to roll forwards in the parking space ... and then you have to catch it when it suddenly releases. Personally I'd be happier using the handbrake but unfortunately you can't turn HSA off (on the Mk 3, anyway).

You would if you were facing downhill and you wanted to reverse back up the hill.  In this case hill start would stop you rolling down the hill.

Hill start assist only holds the brakes either until you apply the throttle or for about 5 seconds and then releases and car is free to roll. Hill start assist will work in forward and reverse.

Brake hold will hold the brakes for a much longer period, indicator on the dash will change to show its applied  and then if left or the seatbelt is released will apply the parking brake, it is similarly released when the throttle is applied.
